Mushroom Stuffed Chicken Breasts
Wednesday, June 13th, 2007We have great sources of mushrooms all around the County. If we have such great sources, why not cook delicious meals with them? Today, I am going to share one of my most favourite recipes with you. It’s called Mushroom Stuffed Chicken Breasts. Be sure to try this at home!
1 lb Mushrooms
1 lb Brown Mushrooms
4 tbsp Margarine
2 cups Finely Chopped Onion
1 cup Finely Chopped Celery
1 tsp Salt
1/2 tsp Nutmeg
1/4 Black Pepper
1/2 cup White Dry Wine
2 cups Whole Wheat Bread Crumbs
3/4 cup Chopped Parsley
8 Chicken Breasts
Preheat oven to 400 F. In a large skillet, melt the margarine and add the chopped mushrooms, onion and celery. Saute about 3-5 minutes or until soft. Add the salt, nutmeg, pepper, and wine and cook for 2-4 minutes, stirring constantly. Stir in the bread crumbs and parsley and remove from the heat.Stuff each breast with about 3/4 cup of mushroom stuffing, and place them in a shallow roasting pan. Brush the chicken breasts with melted margarine.Bake in the preheated oven at 400 F for one hour. Continue bastint once or twice while baking. Bake until the juices run clear or until a thermometer place in the breast registers 180 F. Makes 16 1/2 breast servings.
