Choose beet roots that are firm and unwrinkled.  With the greens attached, beets can keep for only three to four days in the fridge as the root has to supply moisture to the leaves.  Without the greens attached, beet root can keep for a couple of weeks.

Beets with round bottoms are sweeter than flat-bottomed ones.  Eat beets fresh to enjoy its flavor better.  Do not overheat beets when cooking as heat destroys all the essential nutrients.  Remove the skin before cooking.

Nutritional Facts

Beets are loaded with vitamins A, B1, B2, B6 and C.  The greens have a higher content of iron compared to spinach.  They are also an excellent source of calcium, magnesium, copper, phosphorus, sodium and iron.

While the sweet beet root has some of the minerals in its greens to a lesser degree, it is also a remarkable source of choline, folic acid, iodine, manganese, organic sodium, potassium, fiber and carbohydrates in the form of natural digestible sugars.

Its iron content, though not high, is of the highest and finest quality that makes excellent food that is blood building.  This renders it highly effective in treating many ailments caused by our toxic environment and surrounding.

Considered a vegetable, rhubarb is treated as a fruit and it provides a good source of vitamin C, fiber and calcium. Rhubarb can be quite tart and it usually requires a little sweetening from honey, fruit juices or sugar.

Typically used in preserves and sauces, or in dessert dishes such as tarts, pies and strudels, this delicious vegetable comes in a wide array of varieties. Bite into Bob Downey’s Rhubarb Crisp or Heather Zorzini’s Rhu-Berry Rosé Compote.

Harvestin’ the County at the TASTE! event on Saturday! http://harvestin.ca/?p=50 http://harvestin.ca/?p=50#comments Mon, 28 Sep 2009 17:36:32 +0000 admin http://harvestin.ca/?p=50 Harvestin’ the County was up bright & early Saturday morning to head to the Crystal Palace in Picton for the TASTE! event. 

 We organized the Farmers Market this year and we had lots of products that were generously donated from the following farms:
Vicki’s Veggies
Bethel Organics
Campbell’s Orchards
Fosterholm Farms
Cherryvale Organic Farm
Black Walnut Teaching Gardens
Sunset Farms
Walker’s Greenhouse
Hagerman Farms
Black River Cheese

We sold everything from potatoes, corn, tomatoes, peppers, eggplant, gourds, curd, apples, onions, and buckwheat flour, to maple syrup, herbs, edible flowers, lovely mum bouquets, chimichurri sauce, tomato puree, and Harvestin’t-shirts & posters. All the leftover products were donated to the Picton Food Bank.

All proceeds from the Farmers Market also went to the Picton Food Bank.

The weather was a bit windy, but the rain held off and we had a fun-filled day at a great local food event!

Many people are becoming aware of just how far their food travels before it reaches the dinner table. This program plans to follow several aspiring and seasoned ‘locavores’ as they struggle to make a local diet work in today’s busy world.

TVCOGECO is looking to profile interesting and passionate locavores in and around Kingston, Belleville and Brockville: Families and couples challenging themselves to eat locally, chefs scouring the countryside to keep their kitchens stocked and their menus enticing, engaged couples incorporating the 100 mile challenge into their wedding banquet. Through these stories, TVCOGECO will also have the opportunity to meet local food producers, distributors and organizations and see what they have to offer to their communities.

TVCOGEGO is looking for any familes or couples that may be thinking of taking on a local food challenge or perhaps a chef who is either introducing a local foods menu or expanding on a successful one.
